Chocolate Coconut Snowballs

– 1/3 cup butter
– 3 ounces cream cheese, softened
– 3/4 cup sugar
– 1 egg yolk
– 2 teaspoons almond extract
– 2 teaspoons orange juice
– 1 1/4 cups flour
– 2 teaspoons baking powder
– 1/4 teaspoon salt
– 1 (14 ounces) package coconut, divided
– 1 (12 ounces) package semi-sweet chocolate chips

  1. In large bowl, cream butter, cream cheese and sugar.
  2. Add egg yolk, almond extract and orange juice, beat well.
  3. Combine flour, baking powder and salt and gradually add to creamed mixture.
  4. Stir in 3 CUPS of the coconut.
  5. Cover and chill for an hour.
  6. Preheat oven to 350 degrees.
  7. Stir chocolate chips into dough.
  8. Shape dough into 1″ balls and roll each in remaining coconut.
  9. Place on ungreased cookie sheets and bake for 10-12 minutes or until light brown.
